Sweet Potatoes Just Like Mom’s (Kinda)
It’s long past time for another ITF culinary masterpiece! And ITF constituents everywhere start banging their silverware on the table in raging impatience!
Ok, so these aren’t quite just like Mom’s. But there the closest I can come, and they’re easy to do.
You need two 16oz cans of sweet potatoes, one 20oz can of pineapple chunks, and a bunch of marshmallows.
Dump the two cans of sweet potatoes (and juice) in a baking dish. These chunks were really big, so I cut them up some more.
Open the can of pineapple chunks. Drain (or drink) the juice, then put most of them in the dish with the sweet potatoes. Mix it up. Eat the remaining pineapple chunks with a fork.
I like this dish really juicy, so I tried putting a little of the pineapple juice in. It’s a little bit much then, I wouldn’t do it next time.
Dump in a bunch of miniature marshmallows until the top is covered.
I’m quite upset, I didn’t have enough marshmallows. Don’t let this happen to you.
Slide it in the oven, bake it at 350 for 10-15 minutes.
Enjoy with a glass of blackberry iced tea!
Serves one.

People actually eat sweet potatoes on purpose?!
(Yeah, I know they do, because I’m persuaded my wife, mom, and sister are people.)
But for me, I’d look upset too if I only had a puny little bag of marshmallows to throw at the things.
I think your recipe is too light on marshmallows and pineapple and way too heavy on sweet potatoes.
I’m glad it served only one.

Oh Tom,…(SHUDDER!)…those are good at Thanksgiving and Christmas, but not before. I only eat those once and sometimes twice a year. I hope that you don’t make those for me after we get married! (Remember that dish only serves one!) Glad that you really love to cook. Love you, Jewel

Sweet Potatoes are disgusting no matter how you fix them. I nevercould stand them especially though with the pineapples and marshmellow’s.

Tom, I must confess that prior to this morning I had never thought to shooting sweet potatoes. It sounds like a fitting way to treat them. Do I do it before or after they’re cooked? And how hardy are they? Will a BB gun cause them to succumb or must I borrow Russell’s “howitzer”?
You further opine: “maybe that would be a good way for you to get your feet wet!” Nah. That sounds downright psychotic — but don’t get me wrong, I’d rather dampen my feet with firearm-blasted sweet potatoes than have to eat them.
Now, some kind well-intentioned words for Tom and/or Jewel….
You better cut the other sweet talk till you engage in some deep sweet-potato talk. I’ve said it I-don’t-know-how-many times: Don’t go into marriage expecting the other person to change for the better! He’ll drag you down, Jewel, mark my words.

Sweet potatoes—NOT MY FAVORITE–Jewel-Iseem to remember that Tom can consume large amounts of mashed potatoes and gravy–maybe you can convince him that would be better than sweet potatoes!!!Shouldn’t be to hard–we always put several xtra in the kettle when Tom was coming to eat!!!!!

Now I do generally enjoy sweet potatoes. Especially with marshmallows. But I’m not too sure about the pinapple in it, and this recipie is nothing whatsoever like mine. You need to mash the seet potatoes before they enter the pan… I think I’ll stick with the known thing.

Absolutely dreadful……
I’m convinced Tom fed it to his dog (or the ducks) instead of eating it….
He only has a picture of before and after. No proof he actually ate it.
I won’t, can’t beleive it was eaten by a human.

Oh yeah, that’s an awesome recipe! The half of me from the Deep South in me tells me that I like sweet potatoes.
I must say, though, I’m surprised that you said to eat the remaining pineapple chunks with a FORK?? That’s very uncharacteristic of you. But a very good post, nonetheless!

Sweet potatos are not so bad if they are just baked and have some butter and brown sugar applied. Since I am diabetic I have to leave off the sugar and marshmellows {:^( and take them straight from the oven in the skin.
This “fork vs spoon” thing has me wondering, is it a personal thing or is it to better achieve faster intake that a spoon beats out a fork?
As far as pineapples go I like them in jello salad, or cut up fresh. I bet some of you like them on your pizza, yuck, that makes me sick. We had a teacher from Oregon here at Ebenezer Menno. Church and he started that foolishness around here at our pizza parties. I hear that he took it to Poland when he moved there.
Tom, I like it here, I think that I will spend less time at By’s and Darin’s blogs to “comment” here, that ok? Thinking on your topics is much easier than over at those blogs. The only problem is that there is only so much that one can say about sweet potatos and pineapples. Oh well, guess that I will just have to do some inserts from the old Power Bible program to fill up some space. We will see! Catch ya later! {;^)

I’m with you on the sweet potatoes, whole or mashed… But the pineapples, not so sure. I think I would prefer to load em up with more mallows. I am curious as to what you would name your concoction…possibly “thunder-sweet-potatoes”
